"Pinot Noir from Pommard. The vines are between 10 and 30 years old and grow on clay and limestone. 100% de-stemmed. Three day cold soak, followed by semi-carbonic maceration, with a little punching down afterwards for extraction. Aged in 228L seasoned barrels for 12 months. Settled in tank for a further 5 months. Not fined or filtered.
Hyper expressive perfume. Strawberries and spice, with a little blood orange at the outskirts. Very unique and original nose. Light, delicate fruity mid palate, with super fine tannins. Plenty of tension on the finish."
