"Aligoté from 40 year old vines in Savigny-les-Beaune on Clay and Marne. This year he also included grapes from two plots in Échevronne (Hautes-Côtes de Beaune) on clay and limestone, where some of the vines are 90 years old. Natural fermentation with ageing on lees in 228L and 500L seasoned barrels for 12 months. Settled in tank for a further 3 months, followed by a light filtration.
Reminiscent of the 19, this is superb. Aromas of pear, croissant and hazelnut. The palate has notes of apple, lemon barley, and lime. Fresh and energising but with a broad mid palate and texture thanks to time on lees. Tightens up on the chalky, lingering finish. Perfectly ripe fruit with wonderful acidity and texture. Incredible balance overall. Magic."
