Domaine Paul Pillot is one of the most exciting growers in the Côte de Beaune, managed by siblings Thierry and Chrystelle Pillot, who run their fourth-generation estate in Chassagne-Montrachet. Spanning approximately 13 hectares, the estate boasts an impressive portfolio of 17 appellations, with a primary focus on Chassagne-Montrachet, along with smaller parcels in Saint-Aubin and Santenay.

The Pillots cultivate some of the most revered sites in Chassagne, including prestigious vineyards such as Les Caillerets, La Romanée, and Les Grandes Ruchottes. Their commitment to organic farming is evident in their meticulous practices—each Premier Cru vine is tended to exclusively by hand, with approximately one person dedicated to every hectare. The vines are trained high, and yields are tightly controlled, ensuring the utmost quality.

As a young grower passionate about achieving freshness and tension in his wines, Thierry Pillot's meticulous attention to detail creates exceptionally dense wines. The combination of low yields and impeccable farming practices contributes to the immense energy and purity of these wines. Consequently, the wines of Domaine Paul Pillot are in high demand and are offered on an allocation basis, a testament to their outstanding quality and appeal.

This nicely balanced effort could use better depth so at least some aging is in order."

"Picked earlier, tressed, 35 hl/ha, 12% natural plus a bit added. Here the whole bunches are entirely integrated, a bit of strawberry and some rose petals, but neither crushed strawberries nor dried roses, rose fanée. Just a sense of magical balance even on the nose, and again on the palate with just a little austerity right at the back. Very complex and clearly a huge amount more to reveal with age. A really beautiful long aftertaste."
