Rob Walters, head of Bibendum, one of Australia's premier wine importers, has taken inspiration from the many astounding producers in his portfolio to create his own winery, Place of Changing Winds.

The site where his vision and vines take root (emphatically recommended to him by Michael Dhillon of Bindi) is located in Bullengarook, a small hamlet in the Macedon Ranges of Victoria.

Situated at 500 metres above sea level, the ancient soils here are riddled with quartz, quartzite and sandstone and only Pinot Noir and Chardonnay is grown. The vines are planted very closely at a range of densities—from 12,000 to 33,000 vines/ha. The average density is over 15,000 vines/ha.

His goal here is simple: "to produce wines of the highest possible quality and the maximum expression of place"

In addition to the incredible estate Pinot Noir and Chardonnay wines, the team at Place of Changing Winds also craft magnificent Roussane and Syrah based wines with fruit acquired from premium growers in Heathcote. These 'grower wines' are made with the same care and deft touch as the estate selections and represent incredible value.

"The additional wines help the estate project to flourish and fund the low yielding growing and infinitesimal detail from the viticulture approach. Picked fully ripe and really golden, pressed to neutral oak and left on solids with long maturation following. There’s a touch of roussanne in it too.

Really textural, rich and potent, a savoury edge and more on the preserved lemon, ginger, buttery honey toast with cool acidity underlying. It’s very complex, a layered and intense experience with Serious White Wine written all over it. Mouth-coating and lush in the most wonderful sense. Multi-dimensional wine. A full and fantastic white wine."

2021 Syrah No.2

"A blend of Heathcote and Harcourt fruit, brought to life in mostly old oak and concrete for 16 months, then to stainless before bottling. It’s 70% whole bunch or so.

While juicy and thick set it has a good deal of fruit, spice and herbal information, both perfume and palate does dark cherry, choc-mint, sage leaf, blood orange – with fine, firm, al dente tannin in the vein of nerello mascalese or similar. It’s a brooding and deep red, chewy and potent but with levity on its side. Charming in the moodier frame."

2021 Harcourt Syrah

"The reason the POCW folks went to this vineyard was for the syrah, this being the first of the releases solely from this site, from a singular year.

Very floral in the perfume, violets and lavender, whiffs of eucalyptus and loads of raspberry, cherry and strawberry, in a fog of scent too. Lots of concentration to taste but with a glossy wash of acidity under the tart red cherry, game meat, dried herbs and white pepper characters. Beautiful flavours, fine, satiny tannins, great extension of flavour, a cool, minty finish. Spot on medium weight fragrant and spicy style."
