Domenica Wines is the reincarnation of the previous Ergo Sum joint venture between Rick Kinzbrunner, Michel Chapoutier and Peter Graham. In 2012 Peter purchased this spectacular vineyard from his business partners to become sole owner and winemaker here.

Without a doubt, Peter is among the most talented winemakers in Beechworth. After accumulating a wealth of knowledge and experience over his time in the region (13 years of that working as assistant winemaker at Giaconda), Peter crafts superb wines at incredibly high quality. These are genuine classics in the making, and it's our advice that they are sought out at every opportunity.

2018 Chardonnay
Usually $48 - Special Offer $44

Grown on a south facing slope, the fruit is hand picked lightly crushed, and basket pressed. The heaviest solids are briefly settled out by gravity, then the juice transferred to barriques awaiting the start of fermentation. This occurs naturally, when it is ready, and takes as long as it takes.

Well balanced fruit will contain everything required to ferment to dryness. Naturally formed sulphides occur in some barrels – usually to a point which produces the beautiful nutty, matchstick characters so symbiotic with chardonnay. New oak is used judiciously.

2018 Nebbiolo

The single acre of nebbiolo is grown in a cool, protected southerly pocket on the corner of shale at the southern end off the property. This soil holds more water than the granite, allowing the typically large canopy to maintain its integrity throughout the summer, usually without supplementary irrigation. Tiny yields of three or four bunches per vine develop the intensity of fruit required to make nebbiolo with beautiful structure, and a deep complex core of ripe fruit.

2017 Shiraz

The Domenica Shiraz is produced from 100% estate vineyards that span the entirety of the site. Up to 25% whole bunches are included depending on the season with the remainder lightly crushed and destemmed before being sent to ferment in concrete. Post-fermentation maceration length is again dependant on seasonality, after which the must is pressed and taken to barrel to mature for up to 21 months in French oak.

The resulting wine is soft yet powerful with rich, dark fruit balanced by great acidity and tannin structure.
