"In principle, the 2023 Les Chalasses Vieilles Vignes Rouge was produced with Poulsard, but it also contains some Enfariné, an old red variety that was almost extinct 20 years ago but was rescued, though it's still not allowed by the appellation for its wines. The name means "floured," because it has a whitish skin, a floury color. In the past, the grape hardly reached 7% alcohol and was therefore abandoned, but nowadays with climate change, it reaches 12%. It gives spark to the blend, as it's higher in acidity, and it keeps the delicate Poulsard profile, pale, ethereal and wild, with notes of rose hip, hibiscus, watermelon and herbs, with levity and energy."
