From the same two Grand Cru villages as the Brut Blanc de Blancs, Chouilly and Cramant, and the blend structure is identical. Two things separate it: six additional months on lees, and a dosage of 3g/L rather than 4g/L. The result is a wine with greater autolytic depth and a drier finish, the chalk and citrus character of the Cramant fruit more exposed, the foudre-derived texture carrying more of the weight. For those who want the same terroir with a little less cushion, this is the version.
