This cuvée is the expression of several parcels with high qualitative potential: “Les Tilles,” “La Croix,” “Les Chaumes,” and “Le Champ Lavoca.” Good exposures, good plant material, excellent harvest quality. This naturally led us to an alternative vinification, which for us is the optimal expression of Pinot Noir: whole-cluster vinification (not destemmed).
