The Kostas Rind Chardonnay is grown in a 1.5 hectare plot. The wine is fermented in French barrels of which typically 20% are new. Fermentation occurs without the addition of cultured yeast and the wine remains in barrel on yeast lees over winter with only a small amount of malo-lactic conversion taking place. It is racked around eight months after vintage, and returned to barrel for a further three months before bottling.
“This is a seriously powerful and delicious wine balancing fresh fruit character with layers of complex flavours. The nose has fresh cut pear, stone fruit richness, some lime zest, cashew nuts, spice....it is very complex! The palate has outstanding richness and intensity and mouth coating texture whilst remaining fresh and vibrant. There is a complex interplay between freshness, richness and complexity. Generosity of flavour at one moment then restraint and brightness at another. It is quite beautiful now and will improve for a decade.” - Producer Notes
