I am not the only person who considers Domaine Servin one of the unheralded and perhaps underestimated producers of Chablis. Maybe a little like their voisin, Domaine Droin, they are seen by some as an old-school producer that is not averse to machine-harvesting. There are no concrete eggs dotted around the winery, nor do I expect to see any. Yet the wines not only perform well in bottle, but can age supremely well...

2020 Chablis 1er Cru 'Vaucopin'
Usually $79 - Special Offer $75
There is a vague whiff of the exotic lurking in the background of the aromas of white peach, honeysuckle and quinine. The middle weight flavors aren't quite as concentrated though they are perceptibly finer with a fine bead of minerality adding a sense of lift to the borderline salty, clean and nicely long finish. Once again, more depth would help but the underlying material appears to be present for that to occur.

2020 Chablis 1er Cru 'Butteaux'

A subtle but perceptible application of wood sets off equally ripe aromas poached pear, apple, citrus confit and mineral reduction. Here too there is excellent density to the palate soaking medium-bodied flavors that also flash good muscle and power on the equally compact and built-to-age finish. This could use a bit more depth but that should reasonably develop with a few years of patience.

2020 Chablis 1er Cru 'Montee de Tonnerre'

Here the expressive nose is at once much more floral but also more elegant with its airy aromas of cool citrus, quinine, tidal pool and oyster shell hints. There is a lovely sense of restraint to the palate etching middle weight flavors that are shaped by citrus-tinged acidity on the balanced, bone-dry and lingering finale. This classy effort is very MdT in style.
